WHAT EXACTLY DO I GET IN MY 1/4 BEEF PACKAGE? 

You can expect to take home approximately 130-155lbs of vacuum-packed cuts of beef. These come in 3 to 4 cardboard boxes and will take up 4 to 5 cubic feet of freezer space. 

Each quarter is a "mixed quarter", containing an even split of cuts from the front and rear of the animal (i.e. all four 1/4s from one animal will include the same cuts of beef). 

The approximate breakdown is as follows (exact amounts/sizes vary): 

  • 20lbs of steaks (tenderloins, rib eyes, top sirloins, sirloin tips, flank)

  • 20lbs of roasts (brisket, chuck roast, cross rib roast, eye of round)

  • 7lbs of ribs (prime ribs, short ribs)

  • 9lbs of soup bones

  • 5lbs of stew meat

  • 90lbs of lean ground beef  

WHY DO YOU SELL YOUR MEAT BY "HANGING WEIGHT"?

Hanging weight is the weight of the beef carcass while hanging at the butcher. Our beef hangs for at least 14 days to optimize flavour and texture. This dry-aging process will cause the beef to lose some water weight. When the beef is cut and packaged, further weight is lost when scraps and certain bones are discarded. 

There are two key reasons why we (and most others) price our bulk meat by hanging weight, rather than by final weight:

1) Logistics - This is the only weight that the butcher provides us with. Using hanging weight for billing allows us to provide invoices ahead of time, and leads to a smooth, hassle-free pick up day. 

2) Fairness - Different cutting selections on the same quarter of beef can lead to different final weights. For example, consider two customers who each order a custom-cut side of beef. If one customer were to choose "regular" ground beef, and another were to choose "extra lean" ground beef, the latter customer would end up taking home substantially less beef due to the discarded fat. By using hanging weight, these customers are charged the same amount regardless of how they choose to have their beef cut.

For our default cut list, we have found that final take home weight is about 65-70% of hanging weight. If you are having your side of beef custom cut, take home weight will depend on your selections.

CAN I CHOOSE HOW MY BEEF IS CUT?

If you order a 1/2 beef, or split one with a friend, you can have your beef custom cut at no extra charge. This allows you to load up on more of the type of cuts you like most (i.e. you may want more roasts, or more steaks, or you may want your ground beef to have a higher or lower fat content than the lean ground beef in our default package). We will provide you with a cut list to fill in when you make your order.
